Juice Pulp sugar contents?

A while back I went on a juice fast. I had tons of juice pulp that I didn’t want to go to waste, so I made a LOT of  juice pulp crackers with my dehydrator. Ingredients are juice pulp + flaxseed + spices. The pulp is mostly from vegetables but also fruit: Juice pulp from celery, cucumbers, carrots, beets, parsnips, spinach, pears, pineapple, apples, grapefruit, etc.

Now I’m doing Keto. So my question is… how much sugar is there in juice pulp? Is it negligible since juice pulp is mostly skin/fiber? Or should I consume with caution? I haven’t been able to find any information about this.

Hm good question. I would say to proceed with caution. I’m not sure how to calculate that amount. I’d maybe reserve it for a treat since dehydrated fruit/fruit leather is typically pure sugar. (Although I realize homemade ones will be less sugar.) Good luck!
