Anyone have any good breakfast ideas?
New to keto, I have done atkins before and had a lot of success but then got back to eating cereal etc. so going to try this and see how it works. So Far So Good. I am trying to figure out how many carbs per day, how to work ingredients into recipes, etc. Just getting started (2 weeks) and I have lost about 8# and am feeling great. Don’t feel like I am missing anything so far. I am looking for some good breakfast ideas. Someone gave me an egg muffin recipe and I am going to try that this afternoon. it makes 12 muffins so I will throw them into the freezer and thaw them out when I am at a loss for something to eat. Smoothie recipes would be welcome, Not a kale fan, but love spinach in my smoothies. Today I bought some Chocolate Protein Powder wondering how I can use that in smoothies too. Got some Chia seeds and some flax seed to mix in to smoothies, eggs. etc
THANKS, JeanneJ

I make myself porridge every morning:
15g whey
50 ml coconut milk
10g coconut flakes
10g coconut oil
15g coconut flour
add 100 ml water
15g raspberries
heat up coconut milk and coconut oil. Add dry ingredients. Add water. Bring to boil and then let simmer without any heat for 5 min. Add rasberries. I love it!

My go-to keto breakfast is bulletproof coffee (or sometimes called a rocket fuel latte):
- 16 oz hot coffee blended with
- 1 tbsp kerrygold butter
- 1 tsp-1tbsp Medium Chain Triglyceride (MCT) Oil
- and sometimes I’ll add a little collagen powder (Perfect Keto’s vanilla collagen is great)
That’s usually all I need to get me through till lunch or later, but sometimes I’ll have a sausage patty or two if I’m feeling hungry.

For me, I have a bulletproof coffee (1Tbsp butter, 1Tbsp MCT oil and 1Tbsp Heavy Cream) when I get ready around 6:30 – 7am and then I have a Rocket Fuel Latte on my way to work around 7:45-8am and it usually keeps me full until 1-2pm.
Rocket Fuel – 1Tbsp butter, 1Tbsp MCT or coconut oil, 1Tbsp Heavy Cream, 1 Tbps nut butter or Hemp seeds, 1 scoop collagen and coffee, 1-2Tbsp of almond milk (only on some days)

Since I am dairy, grain and sugar free.. I bake blueberry-almond muffins like you are doing, and have them on hand. I also make a loaf of almond-coconut flour keto bread for the week,
In the morning I have a fried egg on a slice of the bread, with 3 strips of bacon (cook ahead), avocado slices, a little mayo , tomato and lettuce. I drink almond milk warmed with cocoa powder, turmeric and cinnamon. Have been using Bocha Sweet (since I don’t use artificial sweeteners), and it’s a terrific breakfast.
I also make a large Mushroom-Spinach or Kale- green onion Frittata, and have that on hand for 3 days. Add some Almond Cream Cheese (Kite Hill), an organic Chicken Sausage and a toasted muffin.
Coconut-almond flour Pancakes are yummy too. Whip Coconut Cream with pure Maple Extract and a little Bocha Sweet for a topping. Add berries and bacon or sausage.

The Keto scientists suggest that we don’t have breakfast. Instead we intermittent fast to stay well in ketosis and have a first meal at about 1pm.

I am AIP (RA and Hashimoto’s). I am 68 and live with my 42 year old daughter, and she is AIP as well (Hashimoto’s and lupus erythematus). We love eggs and use them as an excellent source of protein, however, both of us began to get a red rash with bumps along our “laughing lines” – creases of the mouth, after eating them. Going ketogenic, it was hard because there are so many delicious recipes with eggs. So I switched to Goat’s Milk Greet Yogurt with organic blueberries. Delicious and for me, healthier. However, I live in the cold climate and it’s hard on those cold, winter days not to have a warm breakfast, but I’m use to it now.

I hate cooking…that being said, I say a recipe on all day I dream about food that was a Cinnamon Crunch cereal. I made the cereal and could have eaten the whole batch for a snack. It was sooo good. I adjust it a little to fit my keto macros and I added blueberries, but I can pack it along with almond milk and make my cereal at work. It’s a great on the go snack dry as well!!

Fresh spinach in a bowl with butter and cooked in the microwave for about 1 – 1-1/2 minutes & topped with a combination of the following depending on what I have on hand: fried egg or scrambled egg, bacon or chicken sausage (I always make the whole package ahead of time) avocado and grated cheese – sooo yummy and you get your greens in the morning!

My Go to Breakfast
2 tblspoons coconut oil
3-4 cloves garlic minced
2 cups baby spinach
3-4 tablespoons real bacon bits
1/2 tsp lemon pepper seasoning
1/4 or less cup cheese of your choice
2 beaten eggs
1 medium avocado
Brown garlic then add baby spinach and cook down for a minute or two over medium heat. Add lemon pepper seasoning and bacon bits, cook for another minute. Add in two beaten eggs and cook until done. Turn off heat and add in cheese till it softens.
Pour mixture into a bowel and add in avocado on top, mix or eat separately…. very tasty.

My current breakfast consists of half or one avocado (sliced in half with a drizzle of Apple Cider Vinegar), one or two boiled eggs, a few slices of cucumber or tomato. Sometimes I add flaxseed crackers with a little sheep or goat cheese. Really quick to make and also travels well (except the cheese)!
Another option is to batch cook a frittata with eggs and green veggies and eat during the week.
