I’ve been trying to eat low-carb for years and I want to make the switch to keto to see if it will help with weight loss. My main issue is I’m single and it’s tricky to plan meals. All the recipes are for 4-6 servings (or more) and I only have my fridge freezer, so I’m either eating the same meal everyday for a week or wasting food. Most meal planning services assume you are planning for multiple people so they’re really not useful. Any good ideas for meal planning for singles?
I make big portions of meals and separate them. I use a vacuum sealer to create individual meals that I can just grab from the freezer when I head to work. Other than that, I just grab a different meat, depending on what is on sale and just eat that all week. I use a George Forman grill at work to cook the meat.
When I’m looking for a quick, simple meal, I put some meat in the bottom of an oven-proof bowl, like leftover chicken, canned or frozen fish, or a couple eggs. (You might prefer to use a microwave.) I fill the bowl with vegetables (fresh or frozen, especially green leaves) and dried herbs. I sprinkle salt on. I add fat, like butter, cream cheese and cream. I put the lid on, or cover it with foil, and place it in my little counter-top oven, and cook it until the meat is done.
My other favorite quick, simple keto meal is a heaping large salad bowl full of lettuces, topped with finely chopped celery, sliced cucumber, avocado, and canned fish or “boiled” eggs. Then I sprinkle it with salt, and pour lots of good olive oil on.

How hard is it to take a recipe made for four and divide the ingredients in four? Also, why do you need a recipe to make a steak and a salad? Have some fun with the ingredients, toss stuff in together and see what happens. Cooking is more of an art than a science IMO.
